It’s Meat-free Monday again, but absolutely no need to panic. Alwyn Laubscher, Head Chef at prestigious Sabi Sabi Earth Lodge, has shared his favourite soup recipe with us. It is simply scrumptious!
Roasted red pepper, plum tomato & red onion soup
2 x Red peppers (deseeded and cut in chunks)
2 x Medium red onions (peeled and cut in chunks)
2 x 420g tins whole peeled tomatoes
10g fresh thyme
2 cloves of garlic (chopped)
100gr crispy croutons
100gr cream cheese
Add everything together in a roasting tray, cover with tin-foil and bake in the oven at 180 degrees for 1 hour.
Cool slightly and blend until smooth
Divide in soup bowls topped with crispy croutons and cream cheese
