Friday Feast courtesy of Antrim Villa

I have written about the lovely guesthouse Antrim Villa before, and promised you a treat from the owner (who also happens to be an excellent chef as well as interior designer and a whole lot more!) Jonas Sandström. And here it is:

Jonas’ Pear Marmalade with Walnuts

Pear and walnut


  • 1, 5 kg pears
  • 1 litre sugar
  • 2 lemons
  • 1 tsp grated ginger
  • 100 g walnuts

Cut pears into small cubes; Grate the zest and squeeze the juice from the lemons; Cook slowly under lid for 20 minutes; Add sugar and stir until dissolved; Bring to the boil and boil rapidly for 15 minutes without lid; Add ginger and walnuts 5 minutes before the end; Remove foam and allow to rest for 15 minutes; Pour into boiled mason jars and seal

Enjoy this delicious marmalade with a cheese from the South African winelands, like a Fairview Camembert
