Have you ever wished that you could re-create some of those great dishes you’ve had  restaurants? Well, Simply South Africa is going to give you the chance, if not to re-create something that you already had, so at least to try recipes straight from the head chefs at some of the amazing restaurants featured in this blog!

I’ve already told you about Eight at Spier, the restaurant that aims to be “an expression of balance, cycles, harmony, infinity and abundance” and succeeds in every way. Now, here’s your chance to re-create that magic at home. Make sure you select the freshest, organic ingredients in order to emulate the farm to table eating experience that Eight offers!

Eight’s Sesame Chicken Salad: (Serves 4)

  • 4 free range chicken breasts (deboned)
  • 100g breads crumbs
  • 50g Flour
  • 30g sesame seeds
  • Fresh assortment of lettuces
  • 2 avocados
  • Edible flowers
  • Poppy seeds
  • Salt and Pepper
  • Sunflower Oil for frying


  • 200ml Sunflour oil
  • 25ml Soy sauce
  • 50ml Balsamic vinegar
  • 5ml Sesame oil
  • 25ml Oyster sauce
  • 10ml Honey
  • Salt and Pepper

First make your dressing, place all the ingredients in a mixing bowl and whisk until it forms an emulsion. Place in a dressing squeeze bottle.  Flatten the chicken breast and cut into strips. Heat the oil in a pan until it reaches 180C. Mix together the flour, breadcrumbs and sesame seeds. Place the chicken strips into the flour and dust them off before frying, fry in oil until golden and crisp. Cut the avos in half and place half an avo cut into a strips on each plate, dress with a little dressing, drain off the chicken on some kitchen paper, dress the chicken and place onto the avo, dress you salad leaf and place on top of the chicken, finish off with some poppy seeds and edible flowers.

Chef’s tip: Serve with a nice chilled glass of the Spier Organic Sauvignon Blanc.
